Ingredients (view qty in metric system instead)
1 boneless rib roast, about 4 pounds 1 cup dry white wine 1/4 cup olive oil 1/2 cup chopped onion 1 clove garlic, peeled and minced 1/4 cup chopped fresh parsley leaves 1/4 tsp. ground allspice 1/4 tsp. ground nutmeg 2 tsp. salt 1/4 tsp. pepper
Directions
Place the rib roast in a large bowl, Stir together wine, olive oil, onion, garlic, parsley, allspice, nutmeg, salt and pepper in a small bowl. Pour the wine mixture over the roast and turn to coat. Cover and refrigerate roast overnight, turning occasionally.
Remove the roast from the refrigerator and let stand 1 hour at room temperature. Meanwhile, prepare grill. Remove the roast from the marinade and place on an oiled grill rack. Reserve marinade. Grill roast, covered, over low heat. Grill about 90 minutes for medium, turning and basting frequently with the reserved marinade. Let roast stand 5 minutes before slicing and serving.
Serves 6 to 8.
