Ingredients (view qty in metric system instead)
3 cups sliced fresh mushrooms 1/4 cup melted butter 24 slices sourdough or herb bread 24 slices Swiss cheese 12 large eggs 24 tomato slices 3/4 cup Parmesan peppercorn or ranch salad dressing
Directions
Preheat griddle. Cook mushrooms in a small skillet until tender. Cover and set aside. Lightly butter one side of each bread slice. Lay a piece of Swiss cheese on each bread slice. Grill bread until golden. Meanwhile, fry eggs on the griddle until whites are set and firm. Place one cooked egg on half of the bread slices. Spoon 1 tbsp. mushrooms over egg. Place 2 tomato slices and 1 tbsp. salad dressing over mushrooms. Top with remaining bread slices and serve immediately.
Makes 12 sandwiches.
