Ingredients (view qty in metric system instead)
1 small onion, peeled and chopped 1 clove garlic, peeled and minced 1 tbsp. vegetable oil 1 can beef broth 4 cups shredded beef 4 ounce can diced green chilies, drained 16 ounce can stewed tomatoes, drained 2 tsp. cornstarch 1 tbsp. water 12 flour tortillas
Directions
Heat oil in a large skillet over medium-high heat. Add onion and garlic. Cook, stirring frequently, until onion is tender. Add broth and simmer 10 minutes. Add beef, green chilies and tomatoes. Stir together cornstarch and water in a small bowl until smooth. Add to beef mixture. Simmer mixture 30 minutes until thickened. Heat tortillas in a low oven. Place 2 heaping tbsps. meat mixture onto each tortilla and roll up.
Serves 6.
