Ingredients (view qty in metric system instead)
7 tbsp. butter 1 small onion, peeled and chopped 2 medium tomatoes, peeled, seeded and chopped 1 green bell pepper, stemmed, seeded and chopped 8 large eggs 6 ounces crumbled feta cheese 2 tbsp. chopped Italian parsley leaves
Directions
Melt butter in a large skillet over medium heat. Add onion and cook about 8 to 10 minutes until tender, stirring occasionally. Add tomatoes and bell pepper and cook about 5 minutes until bell pepper is softened, stirring occasionally. Whisk eggs in a medium bowl until frothy. Add the eggs to the skillet along with the feta cheese and parsley. Cook until eggs are creamy and just cooked through, stirring constantly. Divide the scrambled eggs between plates and serve immediately.
Serves 4
