Ingredients (view qty in metric system instead)
Crust: 1 1/2 cups chocolate cookie crumbs 4 tbsp. melted butter 1 package unflavored gelatin 1/2 cup water 3 large egg yolks 2/3 cup sugar, divided 1/4 cup white creme de menthe 1/4 cup green creme de menthe 4 large egg whites pinch salt 1 cup heavy or whipping cream grated semisweet chocolate
Directions
For Crust: Preheat oven to 350 degrees. Place cookie crumbs in a small bowl. Stir in butter until evenly moistened. Transfer crumb mixture to a 9 inch pie plate and press evenly into bottom and up sides. Bake crust 10 minutes. Transfer to a rack and cool completely. Place water in a small saucepan and sprinkle gelatin over. Let stand 5 minutes. Whisk in yolks and 1/3 cup sugar. Cook, stirring, over low heat until thickened, about 5 minutes-Don't boil. Strain mixture into a medium bowl. Stir in white and green creme de menthe. Place mixture over a large bowl filled with iced water. Stir mixture frequently until thickened. Remove from over iced water. Beat egg whites with salt in a large bowl to soft peaks. Add remaini8ng 1/3 cup sugar and beat to stiff peaks. Fold 1/4 of egg white mixture into custard. Fold in remaining whites. Beat cream to soft peaks in a large bowl. Fold into custard mixture. Spoon filling into prepared crust and refrigerate 4 hours until set. Garnish with grated chocolate before serving.
Serves 8.
