3 pounds ground beef 2 large eggs 1/3 cup catsup 3 tbsp. prepared mustard 1 small onion, peeled and finely chopped 1 clove garlic, minced 1 tbsp. dried oregano 1 tbsp. dried basil 1 1/2 tbsp. pickle relish 1 tbsp. worcestershire sauce 2 cups crumbled saltine crackers 3 slices american cheese 4 to 6 slices uncooked bacon
Directions
Preheat oven to 350 degrees. Line a 9x11 inch cake pan with a large sheet of foil. Combine beef, eggs, catsup, mustard, onion, garlic, oregano, basil, relish, worcestershire and crackers in a large bowl. Blend well with your hands and form into a loaf. Lay cheese slices across the top of the loaf then cover completely with bacon slices. Fold up foil over loaf to cover without allowing it to touch meat. Bake 60 minutes. Open up foil and bake an additional 30 minutes to cook bacon. Let stand 10 minutes in pan, then remove from foil before slicing.
