Ingredients (view qty in metric system instead)
2 cups dried navy beans, picked through and rinsed 8 ounces thick cut maple cured bacon, diced 1 cup chopped onion 2 tsp. salt 1/2 tsp. pepper 2/3 cup maple syrup 1 tsp. ground dry mustard 4 cups water
Directions
Place beans in a large pot with water to cover. Heat beans to a boil. Remove the pot from the heat and let stand 1 hour.
Preheat oven to 300 degrees. Drain beans and return to the pot. Add bacon, onion, salt, pepper, maple syrup, dry mustard and water. Heat to a boil, stirring frequently. Transfer the bean mixture to a large baking dish. Cover and bake about 2 hours until beans are tender. Uncover and bake an additional 60 to 90 minutes until most of the liquid is absorbed. Serve warm or at room temperature.
Serves 8.
