Grandma's Old Fashioned Cheddar Cheese Pie Crust

Ingredients (view qty in metric system instead)
3 1/2 cups all purpose flour 1/2 cup sugar 1 cup cold butter, diced 1/2 cup cold shortening, diced 1 cup grated sharp Cheddar cheese 1 large egg yolk 1/3 cup ice water
Directions
Combine flour, sugar, butter and shortening in a large bowl. Beat the flour mixture on low speed until coarse crumbs form. Add Cheddar, yolk and water and mix until well combined. Form the dough into two balls. Flatten each ball into a disc. Wrap tightly with plastic wrap and refrigerate 30 minutes before using.
Makes enough dough for 2 single crust pies or for 1 double crust.
