Ingredients (view qty in metric system instead)
2 1/4 cups whole milk, used in 3 measurements 2 tsp. unflavored powdered gelatin 1/4 cup plus 1 tbsp. cornstarch 1/4 tsp. salt 1 1/4 cups brown sugar 1 cup heavy or whipping cream 6 tbsp. butter, diced 3 large egg yolks, beaten to blend 1 1/2 tbsp. vanilla extract
Directions
Place 1/4 cup milk in a small bowl and sprinkle gelatin over. Let gelatin mixture stand 20 minutes. Whisk together cornstarch, salt and 6 tbsp. milk in a medium bowl. Combine brown sugar, cream, butter and remaining milk in a large saucepan. Cook, whisking, until the milk mixture comes to a simmer. Whisk milk into cornstarch mixture. Return to the pan and cook, whisking, until the mixture comes to a boil. Whisk in yolks and cook, whisking, until temperature reaches 160 degrees. Remove pan from the heat and stir in gelatin mixture and vanilla. Strain pudding into a large bowl. Cover and refrigerate overnight before serving.
Serves 6 to 8.
