Ingredients (view qty in metric system instead)
1 cup plus 2 tsp. old fashioned oats 2 cups hot water 3/4 cup cold water 1/3 cup oat bran 1 envelope active dry yeast 1/4 cup warm water(110 to 115 degrees) 1/4 cup brown sugar 2 tbsp. vegetable oil 1 1/2 tsp. salt 2 to 3 cups all purpose flour 2 to 3 cups wheat flour
Directions
Place 1 cup oats in a large bowl. Stir in 2 cups hot water. Let oats stand 1 hour. Combine 3/4 cup cold water and oat bran in a small saucepan. Bring to a boil over low heat, stirring constantly. Stir in the oat mixture. Remove the pan from the heat and cool completely. Place the 1/4 cup warm water in a small bowl. Sprinkle the yeast over the water and let stand about 10 minutes until foamy. Stir the yeast, brown sugar, oil and salt into the oat mixture. Stir in 2 cups all purpose flour and 2 cups wheat flour until a dough forms, adding additional flour if dough is too sticky. Turn the dough out onto a floured surface. Knead dough about 10 minutes until smooth and elastic. Oil the inside of a large bowl. Add the dough to the bowl and turn to coat. Cover dough tightly and let rise about 1 1/2 hours in a warm place until doubled. Punch down the doubled dough and let stand 10 minutes. Grease the inside of two 9x5 inch loaf pans. Turn the dough out onto a floured surface and divide in 1/2. Form each 1/2 into a loaf and fit into the prepared pans. Sprinkle the top of each loaf with 1 tsp. of the remaining oats. Cover loaves and let stand about 30 minutes in a warm place until almost doubled. Meanwhile, preheat oven to 375 degrees. Bake loaves about 55 minutes until lightly browned and bottoms sound hollow when tapped. Cool the loaves a few minutes in the pans. Turn the loaves out onto a rack and cool completely.
Makes 2 loaves.
