Ingredients (view qty in metric system instead)
2/3 cup sugar 1/2 cup margarine, softened 1 large egg 1 tsp. vanilla extract 1 1/4 cups milk 1 1/2 cups all purpose flour 3 tsp. baking powder 1/2 tsp. nutmeg 1/2 cup yellow cornmeal 1/4 tsp. salt
Directions
Preheat oven to 350 degrees. Line 12 large muffin tins with cupcake papers or grease lightly. Combine sugar, margarine, egg, vanilla and milk in a large bowl. Sift together flour, baking powder and nutmeg in a medium bowl. Stir in cornmeal and salt. Stir into egg mixture until well blended. Divide batter between prepared muffin cups. Bake 25 minutes until a toothpick comes out clean. Serve muffins warm or at room temperature.
