Ingredients (view qty in metric system instead)
1/2 cup butter, room temperature 1 cup plus 2 tbsp. sugar 1 large egg 1 tbsp. dark rum 1 tsp. vanilla extract 1 cup all purpose flour 1/2 cup unsweetened cocoa powder 1/2 tsp. baking soda 1/4 tsp. salt 1 1/2 cups crushed chocolate covered toffee candy 1/2 cup chopped almonds
Directions
Preheat oven to 350 degrees. Combine butter and sugar in a large bowl and beat until light and fluffy. Beat in egg, rum and vanilla until well blended. Sift together flour, cocoa and baking soda in a medium bowl. Stir in salt. Stir the flour mixture into the batter. Stir in crushed toffee and almonds. Drop the dough by heaping tablespoonfuls onto ungreased cookie sheets, spacing 2 inches apart. Bake about 10 to 12 minutes until cookies are slightly puffed and cracked on top. Let cookies cool 1 minute on the pan. Transfer cookies to a rack and cool completely. Store cookies in an airtight container at room temperature.
Makes about 3 dozen cookies.
