Ingredients (view qty in metric system instead)
Crust: 1 1/2 cups all purpose flour 1/2 cup powdered sugar 3/4 cup butter, diced, room temperature
Filling: 4 large eggs 1 1/2 cups sugar 1/2 cup lemon juice 4 tsp. all purpose flour 1 tbsp. finely grated lemon peel powdered sugar
Directions
For the Crust: Preheat the oven to 350 degrees. Stir together the flour and powdered sugar in a large bowl. Cut in the butter until coarse crumbs form. Press the crust mixture evenly into the bottom of a 9x13 inch baking dish. Bake about 20 minutes until golden brown. Cool the crust slightly.
For the Filling: Combine the eggs, sugar, lemon juice, flour and lemon peel in a large bowl and beat until well blended. Pour the filling over the prepared crust and bake about 20 minutes until set. Transfer the pan to a rack and cool completely. Cut into 24 bars. Sift powdered sugar over the top of the bars before serving.
Makes about 2 dozen bars.
