Ingredients (view qty in metric system instead)
2 cups chicken broth 6 tbsp. dry sherry 1/4 cup soy sauce 1 tbsp. finely grated orange peel 1 tbsp. honey 2 1/2 pounds boneless pork loin, cut into cubes 2 pounds Yukon gold potatoes, quartered 6 green onions, cut into 1 inch pieces 3 cloves garlic, peeled and slivered 2 tbsp. white vinegar
Directions
Stir together chicken broth, sherry, soy sauce, orange peel and honey in a large pot until honey dissolves. Stir in pork cubes, potatoes and green onions. Heat to a simmer over medium high heat, stirring occasionally. Reduce heat to low. Cover the pan and simmer pork about 2 hours until very tender, stirring occasionally. Serve over hot cooked rice if desired.
Serves 6.
