Grandma's Blackberry Silk Pie Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
9 inch prepared pie crust
2 cups fresh or one 12 ounce package frozen, thawed blackberries
3 large eggs
1 1/2 cups heavy or whipping cream
3/4 cup sugar
1 tsp. vanilla extract


Directions
Preheat oven to 400 degrees. Prick bottom of pie crust all over with a fork. Line the pie shell with tinfoil. Place pie weights or dried beans over tinfoil to weight down crust. Bake pie crust 15 minutes. Lower oven to 375 degrees. Remove pie weights and foil from crust. Bake the pie crust an additional 15 to 20 minutes until lightly browned. Remove crust from oven. Increase oven to 425 degrees. Place the blackberries in a blender and puree. Strain the blackberry puree into medium bowl. In a separate bowl, beat the eggs until blended. Stir in the cream, sugar, vanilla and blackberry puree. Pour the filling into the prepared pie shell. Bake 10 minutes. Reduce oven to 325 degrees and continue baking pie about 35 minutes until softly set. Transfer pie to a rack and cool completely. Cover and refrigerate pie at least 1 hour before serving.
