Ingredients (view qty in metric system instead)
For Glaze: 1 1/4 cups dark brown sugar 1/4 cup tarragon vinegar 2 tbsp. Madeira 2 tsp. dry mustard
For Ham Loaf: 2 pounds finely chopped cooked ham 1/2 pound ground pork 1 cup minced fresh parsley leaves 2/3 cup milk 1 large egg 4 small shallots, minced 2 tbsp. prepared glaze from recipe above 1 tsp. dried thyme 1/2 tsp. ground nutmeg 1/4 tsp. pepper
Directions
For Glaze: Whisk together brown sugar, tarragon vinegar, Madeira and mustard in a small bowl. Whisk to blend. Set aside.
For Ham Loaf: Combine ham, ground pork, parsley, milk, egg, shallots, glaze, thyme, nutmeg and pepper in a large bowl. Knead with your hands to blend. Transfer meat mixture to the prepared pan and form into an oval loaf. Brush all over with glace. Bake 20 minutes. Reduce oven to 300 degrees. Bake loaf an additional 45 minutes, basting several times with glaze. Remove loaf from oven, Drain off fat from pan and brush with remaining glaze. Let stand 5 minutes before slicing and serving.
Serves 8.
