Ingredients (view qty in metric system instead)
Brownies: 3 1/2 tbsp. unsweetened cocoa powder 1 1/4 cups all purpose flour 1/4 tsp. salt 1/4 tsp. ground cinnamon 10 tbsp. butter 3 tbsp. vegetable oil 5 ounces chopped unsweetened chocolate 2 cups plus 2 tbsp. brown sugar 3 large eggs 1 large egg yolk 6 tbsp. cognac
Glaze: 9 ounces chopped semisweet chocolate 3/4 cup vegetable oil 1 tbsp. cognac
Directions
For Brownies: Preheat oven to 350 degrees. Butter and flour a 9 inch square baking pan. Sift together cocoa, flour, salt and cinnamon in a medium bowl. Combine butter, oil and unsweetened chocolate in the top of a double boiler over simmering water. Stir chocolate until melted. Remove from over water and cool 5 minutes. Beat in brown sugar. Gradually beat in eggs and yolk. Stir in cognac. Gradually beat in flour mixture until blended. Pour batter into the prepared pan and bake 20 to 30 minutes until a toothpick comes out with a few moist crumbs. Transfer brownies to a rack and cool completely.
For Glaze: Combine chocolate, oil and cognac in a double boiler over simmering water. Stir chocolate mixture until melted and smooth. Pour warm glaze over brownies. Refrigerate until glaze is set.
Cut glazed brownies into squares and store in an airtight container in a cool place.
Makes about 1 dozen brownies.
