Ingredients (view qty in metric system instead)
1 cup wheat flour 1 tsp. baking powder 1/2 tsp. ground ginger 1/2 tsp. ground cinnamon 1/4 tsp. salt 1/4 tsp. ground cloves 1/4 cup boiling water 1 large egg, beaten to blend 6 ounce can frozen, thawed apple juice concentrate 2 tbsp. corn oil
Directions
Sift together the flour, baking powder, ginger and cinnamon in a large bowl. Stir in salt and cloves. Whisk together the water, egg, apple juice and oil in a medium bowl until well blended. Stir the apple juice mixture into the dry ingredients until just combined(batter will be lumpy). Heat a large skillet over medium heat. Lightly coat the inside of the skillet with cooking spray. Pour 1/4 cup of batter for each pancake into the skillet. Cook about 90 seconds until bottoms of pancakes are browned and the top is covered with tiny bubbles. Flip pancakes over and cook until the other side is browned. Repeat with remaining batter. Serve pancakes hot.
Makes about 8 to 12 pancakes.
