Ingredients   (view qty in metric system instead)
2 1/4 cups all purpose flour
1/3 cup sugar
1 tbsp. baking powder
1/4 tsp. finely grated lemon peel
11 tbsp. cold butter, diced
3/4 cup plus 2 tbsp. heavy or whipping cream
2/3 cup diced crystallized ginger


Directions
Preheat oven to 400 degrees. Lightly butter a sheet pan. Blend together flour, sugar and baking powder in a food processor. Add butter and pulse until a coarse meal forms. Transfer mixture to a large bowl and stir in 3/4 cup cream until mixture is moistened. Mix in ginger. Transfer dough to a floured surface and knead until smooth. Divide dough in half. Pat out each half to a 3/4 inch thick round. Cut each round into 6 wedges. Transfer wedges to prepared pan, spacing 1 inch apart. Brush tops of wedges with remaining 2 tbsp. cream. Bake about 18 to 20 minutes until scones are light brown.

Makes 12 scones.
