Giant White Chocolate Coconut Macadamia Cookies

Ingredients (view qty in metric system instead)
2 cups all purpose flour 1 tsp. baking soda 1/4 tsp. salt 1 cup softened butter 1 cup dark brown sugar 1/4 cup light brown sugar 1/4 cup granulated sugar 2 large eggs 2 1/2 tsp. vanilla extract 12 ounces chopped white chocolate 1 1/4 cup sweetened flaked coconut 3/4 cup chopped macadamia nuts
Directions
Stir together the flour, baking soda and salt in a medium bowl. Beat together all three sugars in a large bowl. Beat in eggs and vanilla until light and fluffy. Mix in the flour mixture. Stir in the white chocolate, coconut and macadamia nuts. Cover and refrigerate dough at least 2 hours.
Preheat oven to 350 degrees. Line a sheet pan with parchment paper. Drop the cookie dough by 1/4 cupfuls onto the prepared pan, spacing 3 to 4 inches apart. Bake cookies 18 to 20 minutes until edges are browned. Cool the cookies on the pan until lukewarm. Transfer cookies to a rack and cool completely.
Makes about 1 dozen cookies.
