German Potato Salad with Honey Mustard Dressing

Ingredients (view qty in metric system instead)
Dressing: 1/4 cup lemon juice 1 1/2 tbsp. honey 1 1/2 tbsp. sherry vinegar 1 1/2 tbsp. whole grain mustard 1/4 cup olive oil 1/8 tsp. salt 1/8 tsp. pepper
Salad: 3 pounds red potatoes, cut into 1 inch pieces 1/2 cup finely diced red onion 1/2 cup chopped green onion 2 cups halved cherry tomatoes 1 1/2 tbsp. chopped fresh parsley leaves
Directions
For Dressing: Combine lemon juice, honey, sherry vinegar and mustard in a food processor. With processor running, gradually add olive oil. Season dressing with salt and pepper.
For Salad: Place potatoes in a medium saucepan with water to cover and heat to a boil. Reduce heat and simmer potatoes about 15 minutes until tender. Drain potatoes and let cool.
Transfer cooled potatoes to a large bowl and add dressing, red and green onions. Toss to coat. Just before serving, add tomato halves and parsley and toss to blend. Serve chilled or at room temperature.
Serves 6.
