Ingredients (view qty in metric system instead)
3 1/2 pounds chicken, cut into 8 pieces 2 cups buttermilk 1/2 cup all purpose flour 1/2 tsp. salt 1/4 tsp. dry thyme 1/8 tsp. paprika 3 large eggs, beaten to blend 1 1/2 cups seasoned breadcrumbs Peanut oil for frying
Directions
Soak chicken in buttermilk at room temperature for 1 hour. Drain. Stir together flour, salt, thyme and paprika in a bowl. Coat chicken with flour. Dip into egg and coat with breadcrumbs. Heat 1 inch oil in a skillet to 375 degrees. Add chicken and fry until golden brown and cooked through. Drain on paper towels.
Serves 4 to 6.
