Ingredients (view qty in metric system instead)
Vinaigrette: 3 large tomatoes, peeled and seeded 1 cup chopped red onion 2 cloves garlic, peeled and chopped 6 tbsp. red wine vinegar 1/3 cup olive oil 1/4 tsp. salt 1/4 tsp. pepper
Salad: 6 cups diced country bread, crusts removed 3 cups seeded, diced tomatoes 2 cups peeled, seeded, diced cucumber 1 cup diced red bell pepper 1 cup diced green bell pepper 1/2 cup minced red onion 1/2 cup finely chopped fresh parsley
Directions
For Vinaigrette: Combine tomatoes, red onion and garlic in a food processor and puree. Transfer puree to a medium bowl and stir in red wine vinegar. Gradually whisk in olive oil in a slow, steady stream. Season with salt and pepper.
For Salad: Toss together bread cubes with half of the prepared vinaigrette in a large bowl. Let stand 30 minutes at room temperature. Add tomatoes, cucumbers, bell peppers, red onion and parsley. Toss to combine. Add the remaining vinaigrette and toss well.
Serves 6 to 8.
