Ingredients (view qty in metric system instead)
6 large cloves garlic, peeled 2 tsp. salt 2 tbsp. chopped fresh parsley leaves 1 tbsp. sweet paprika 1/2 tsp. crumbled dried oregano 1/4 cup olive oil 3 pound boneless pork tenderloin
Directions
Combine the garlic and salt in a food processor and blend to a paste. Add parsley and pulse to combine. Transfer the garlic mixture to a small bowl and stir in paprika and oregano. Gradually stir in olive oil. Place the pork in a large baking dish. Rum the garlic-herb mixture all over the pork. Cover and refrigerate overnight.
Preheat oven to 450 degrees. Transfer the pork tenderloin to a large roasting pan. Roast pork 15 minutes. Reduce oven to 350 degrees. Roast pork an additional 40 to 45 minutes until temperature reaches 150 degrees. Transfer pork to a cutting board and cover loosely with foil. Let pork stand 10 minutes before slicing and serving.
Serves 6.
