Ingredients (view qty in metric system instead)
2 cups butter 8 ounces sweet baking chocolate 3 1/2 cups sugar 2 cups all purpose flour, sifted pinch salt 8 large eggs 2 tsp. vanilla extract 4 cups coarsely chopped pecans and walnuts 36 pecan or walnut halves
Directions
Preheat oven to 300 degrees. Melt chocolate with butter in a double boiler over simmering water. Stir together sugar, flour and salt. Stir in chocolate mixture. Whisk in eggs and vanilla just until ingredients are moistened. Fold in nuts. Line muffin tin with paper muffin cups and fill each 3/4 full with batter. Place a walnut or pecan half on top of each. Bake about 40 minutes, until a toothpick inserted in center comes out clean. Cool on racks.
Makes about 24 to 30 muffins.
