Ingredients (view qty in metric system instead)
1 cup quick cooking or old fashioned oats 1 cup all purpose flour 1 tbsp. baking powder 1/2 tsp. ground cinnamon 1 cup milk 1/2 cup mashed ripe banana 1/4 cup raisins 1/4 cup chopped dried apricots 1/4 cup vegetable oil 1/4 cup brown sugar 1 large egg white
Directions
Preheat oven to 400 degrees. Line a 12 cup muffin tin with paper muffin liners. Stir together flour, baking powder and cinnamon in a large bowl. Add milk, banana, raisins, apricots, oil, brown sugar and egg white and stir just until dry ingredients are evenly moistened. Fill each lined muffin cup about 3/4 full with batter. Bake about 20 to 25 minutes until muffins are golden brown.
Makes 12 muffins.
