Ingredients (view qty in metric system instead)
Filling: 1 1/4 pounds mascarpone cheese 1 ounce sugar 1/4 tsp. vanilla extract 1 ounce almond flavored liqueur
Crepes: 3 ounces cake flour 3 ounces all purpose flour 1 1/2 ounces sugar 3 large eggs 3 large egg yolks 3 ounces melted butter plus additional 1 1/2 cups warm milk

Directions
For Filling: Mix cheese on low speed with a paddle attachment in a large bowl until softened. Add sugar, vanilla and almond liqueur and mix until just incorporated. Cover and refrigerate.
For Crepes: Sift together both flours in a large bowl. Stir in sugar and salt. In a separate bowl, blend together eggs and yolks. Gradually add the flour mixture, 3 ounces melted butter and milk. Mix until smooth. Let batter stand 1 hour.
Heat two 6 inch nonstick skillets over medium heat. Add melted butter just to coat pan. Add 1/4 cup batter to each pan and swirl to coat bottom. Cook until bottom of crepes are browned. Turn over and cook top until browned. Transfer crepes to a plate and repeat with remaining batter.
To assemble crepes: Place 2 ounces filling in center of each crepe. Fold in sides and roll up burrito style. Seal edges with toothpicks.
Heat oil to 350 degrees in a deep skillet or fryer. Deep fry blintzes until golden brown. Serve immediately.
Makes about 5 blintzes.
