Ingredients (view qty in metric system instead)
Chicken: 1/2 cup buttermilk 2/3 cup yellow cornmeal 1 tbsp. chili powder 1/2 tsp. salt 4 boneless skinless chicken breast halves 2 tbsp. corn oil
Salsa: 2/3 cup chicken broth 1 cup prepared green salsa 3 tbsp. chopped fresh cilantro
Directions
For Chicken: Place buttermilk in a shallow bowl. Combine cornmeal, chili powder and salt in a separate bowl. Place chicken in buttermilk and turn to coat. Dredge chicken in cornmeal mixture to coat. Heat oil in a large skillet. Add chicken and cook about 4 minutes per side until cooked through. Transfer chicken to a plate and tent with foil while preparing salsa.
For Salsa: Add broth to skillet and heat to a simmer. Stir in salsa and simmer 3 minutes, stirring occasionally. Stir in cilantro.
Serve chicken with salsa.
Serves 4.
