Ingredients (view qty in metric system instead)
1/4 cup soy sauce 2 pounds catfish fillets, 6 to 8 ounces each 1/2 cup all purpose flour 1/4 tsp. pepper 3 tbsp. vegetable oil 20 ounce can pineapple tidbits with juice 1 1/2 tbsp. cornstarch 1/4 cup cold water hot cooked rice
Directions
Place catfish fillets in a shallow baking dish. Pour soy sauce over, turning catfish to coat. Cover and let marinate 30 minutes. Stir together flour and pepper in a shallow pie plate. Remove catfish from marinade and pat dry. Dredge fillets in the flour mixture to coat, shaking off excess. Heat vegetable oil in a large skillet. Add floured catfish fillets and cook until golden brown on both sides. Meanwhile, combine pineapple tidbits with juice, cornstarch and water in a medium saucepan. Heat, stirring constantly, over medium heat until mixture comes to a boil. Reduce heat and cook, stirring, until sauce is thickened.
Spoon rice onto plates. Top with catfish fillets and spoon sauce over.
Serves 4 to 6.
