Ingredients (view qty in metric system instead)
1 1/2 cups chopped onion 2 tbsp. butter or margarine 4 cups water 1 1/2 pounds ripe tomatoes 1/3 cup uncooked rice of your choice 1/2 tsp. salt 1/2 tsp. pepper 1 tsp. dry oregano 1 tsp. dry basil prepared croutons for garnish
Directions
Cook onions in a pot with butter or margarine until browned, about 6 to 8 minutes. Bring another pot of water to a boil. Add tomatoes and boil 30 seconds. Remove and place in iced water. Remove skin with fingers or a paring knife. Add to onions along with 4 cups water, rice, salt, pepper, oregano and basil. Bring to a boil. Reduce heat and simmer 30 minutes until rice is tender.
Makes about 6 cups.
