Ingredients (view qty in metric system instead)
Cobbler: 1/2 cup sugar 1 tbsp. cornstarch 4 cups fresh blueberries 1 tsp. lemon juice
Topping: 1 cup all purpose flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3 tbsp. solid vegetable shortening 1/2 cup milk
Directions
For Cobbler: Preheat oven to 400 degrees. Stir together 1/2 cup sugar and cornstarch in a medium saucepan. Add blueberries and lemon juice. Cook, stirring, until mixture comes to a boil and thickens. Continue cooking 1 minute. Pour into an ungreased 2 quart casserole dish. Place in oven while preparing topping.
For Topping: Mix together flour, sugar, baking powder and salt in a large bowl. Add shortening and milk. Mix until dough forms a ball. Drop by 6 spoonfuls over the top of the cobbler. Bake, uncovered, 25 to 30 minutes until topping is golden brown. Serve warm.
Serves 6.
