Ingredients (view qty in metric system instead)
1/4 cup butter, room temperature 1 cup brown sugar 2 large eggs 3 cups all purpose flour 2 cups peeled, grated apple 1/4 cup chopped pecans or walnuts 1 1/2 tsp. baking soda 1 tsp. baking powder 1 tsp. grated lemon peel 1 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 3/4 cup buttermilk
Directions
Preheat oven to 350 degrees. Grease and flour a 9x5 inch loaf pan. Cream together butter and brown sugar in a medium bowl. Beat in eggs. Stir together flour, apple, nuts, baking soda and powder, lemon peel, salt, cinnamon and nutmeg in a large bowl. Blend into butter mixture alternately with buttermilk in 3 additions. Scrape batter into pan. Bake about 60 minutes until a toothpick comes out clean. Cool 10 minutes in pan. Remove loaf from pan and cool completely on a rack.
Makes 1 loaf.
