Ingredients (view qty in metric system instead)
6 ounce can water packed albacore tuna, drained 3/4 cup prepared hummus 1 cup shredded fresh spinach leaves 1 cup peeled, grated carrots 1 tsp. ground cumin 8 slices bread 1/2 cup milk 1 large egg 2 large egg whites 1 tsp. olive oil
Directions
Crumble the tuna into a medium bowl. Add the hummus, spinach, carrot and cumin and mix well. Spread the tuna mixture evenly over 4 slices of the bread. Top with remaining 4 bread slices to form 4 sandwiches. Whisk together the milk, egg and egg whites in a shallow bowl. Dip sandwiches into the milk mixture until lightly soaked. Place oil in a large skillet over low heat. Add the sandwiches and cover skillet loosely. Cook sandwiches about 8 to 10 minutes per side until well toasted. Serve sandwiches immediately.
Makes 4 sandwiches.
