French Toast Stuffed with Cream Cheese and Almonds

Ingredients (view qty in metric system instead)
1 1/2 pounds unsliced French bread 2 ounces sliced, toasted almonds, divided 4 ounces cream cheese, softened 1/4 cup raspberry preserves 12 large eggs 3 cups milk 1/2 tsp. almond extract 1/2 tsp. vanilla extract 1/2 tsp. ground cinnamon 3 tbsp. butter
Directions
Cut bread into 1 inch thick slices Cut a pocket in the side of each slice. Combine half of almonds, cream cheese and raspberry preserves in a small bowl. Stuff mixture into bread pockets. Whisk together eggs, milk, almond extract, vanilla and cinnamon in a large bowl. Add stuffed bread slices and let soak 3 to 5 minutes, turning occasionally. Heat butter in a large skillet. Working in batches, add bread slices and cook until browned on both sides.
Serves 6.
