Ingredients (view qty in metric system instead)
3 tbsp. olive oil, divided 1 medium onion, peeled and finely chopped 2 medium carrots, peeled and finely chopped 1 stalk celery, finely chopped 1 1/4 cup dried French green(or other)lentils, picked through 6 cups water 1 1/2 tsp. salt 1/4 tsp. pepper 4 ounces smoked sausage 1 tbsp. balsamic vinegar
Directions
Heat 2 tbsp. oil in a large pot. Add onion and cook until golden brown, about 6 minutes. Add carrots and celery and cook until softened, about 5 minutes. Add lentils, water, salt and pepper and bring to a boil. Reduce heat, cover and simmer until lentils are tender, about 30 minutes. While lentils are cooking, heat remaining 1 tbsp. oil in a large skillet. Add sausage and brown on all sides. Cool sausage slightly then slice into 1/2 inch thick pieces. Stir sausage and vinegar into soup.
Serves 6.
