Ingredients (view qty in metric system instead)
3 lbs. cut up chicken 4 Tbs. all-purpose flour 2 tsp salt dash of pepper 2 Tbs. butter or margarine 1 onion 3/4 cup apple cider 1/3 cup water 2 tsp. dried tarragon 2 cloves garlic, minced 2 tart apples 1 cup sour cream 2 Tbs. calvados chopped parsley
Directions
Wash and pat dry chicken pieces. In a bowl, combine flour, salt and pepper. Roll chicken pieces in mixture, shake off excess flour. In a skillet, heat butter. Brown chicken on all sides until golden brown. Transfer to a Dutch oven. Peel and chop onion. Saute in skillet for about 3 minutes until transparent. Add to chicken. Add cider and water. Season with tarragon and garlic. Cook covered 15 to 20 minutes. Cut apples into wedges. Remove core. Add to chicken. Cook for another 10 minutes. Add sour cream. Cook 10 minutes more.
