Ingredients (view qty in metric system instead)
Pancakes: 1 cup all purpose flour 1/4 cup powdered sugar 1 cup milk 2 large eggs 3 tbsp. melted butter 1 tsp. vanilla extract 1/4 tsp. salt
Filling: 1/4 cup butter 1/4 cup brown sugar 1/4 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/4 cup heavy or whipping cream 5 firm medium bananas, halved lengthwise
Directions
For Pancakes: Sift together flour and powdered sugar in a medium bowl. Beat in milk, eggs, melted butter, vanilla and salt until smooth. Lightly grease a 6 inch skillet and place over medium heat. Add about 3 tbsp. batter to skillet and swirl to coat the bottom of the skillet. Cook until lightly browned. Flip pancake over and cook other side until browned. Repeat with remaining batter, greasing skillet as needed, making a total of 10 pancakes.
For Filling: Melt butter in a large skillet. Stir in brown sugar, cinnamon, nutmeg and cream. Cook until slightly thickened. Add banana halves to skillet and spoon sauce over. Cook bananas 2 to 3 minutes until heated through. Remove bananas from the heat. Roll a pancake around each banana half and place on plates. Spoon sauce over and serve.
Serves 5.
