Ingredients (view qty in metric system instead)
2 tbsp. butter 1 medium leek, white and pale green part only, chopped 4 cups chicken broth 1 medium potato, peeled and diced 2 cups half & half 3/4 cup grated provolone cheese 3/4 cup grated parmesan cheese 3/4 cup grated mozzarella cheese 3/4 cup grated cheddar cheese
Directions
Melt butter in a large saucepan. Add leek and cook until tender, about 5 minutes. Add broth and potato and bring to a boil. Reduce heat and simmer 25 minutes, stirring occasionally. Puree soup in a blender or food processor. Return to saucepan, add half & half and heat to a simmer. Add cheeses and whisk until melted.
Serves 4 to 6.
