Ingredients   (view qty in metric system instead)
12 ounces red snapper fillets, cut into 1/3 inch strips
3/4 cup diced fresh pineapple
1/4 tsp. salt
1/4 tsp. pepper
four 6 inch flour tortillas
2 cups grated mozzarella cheese
1/2 cup chopped fresh cilantro
2 tbsp. olive oil
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 onion, peeled and thinly sliced
fresh lime wedges
sour cream

Directions
Combine fish, pineapple, salt and pepper in a medium bowl. Let stand 30 minutes, tossing occasionally. Preheat oven to 375 degrees. Place tortillas on a large baking sheet. Top tortillas with equal amounts of mozzarella and cilantro. Bake about 8 minutes until cheese melts. Transfer tortillas to plates. Meanwhile, heat oil in a large skillet. Add peppers and onion and cook until softened, about 5 minutes. Add fish and cook until just done, about 2 minutes. Spoon fish mixture onto tortillas. Serve with lime wedges and sour cream.
