Ingredients (view qty in metric system instead)
3 large eggs 1 1/4 cups sweetened shredded coconut 1 tsp. vanilla extract 2 1/2 cups all purpose flour 2 cups old-fashioned rolled oats 2 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1 cup butter, softened 1 cup sugar 1 cup dark brown sugar 2 cups mini semisweet chocolate chips 1 cup chopped pecans
Directions
Preheat oven to 350 degrees. Lightly butter a large sheet pan. Beat the eggs in a large bowl with coconut and vanilla. Cover and let mixture stand 20 minutes. Stir together flour, oats, baking soda, cinnamon and salt in a medium bowl. Cream the butter in a large bowl. Add both sugars and beat 1 minute. Beat in the egg mixture. Beat in flour mixture on low speed. Stir in chocolate chips and pecans. Roll heaping tablespoonfuls of dough into balls. Place balls on prepared pan, spacing 2 inches apart. Bake cookies 12 to 15 minutes until lightly browned. Cool cookies 2 minutes on pan. Transfer cookies to racks and cool completely. Store cookies in an airtight container in a cool place.
Makes about 3 1/2 dozen cookies.
