Ingredients (view qty in metric system instead)
1 filet mignon, about 7 ounces 1/2 tsp. olive oil 1 1/2 tbsp. cognac or brandy 1/4 cup beef broth 1/4 cup water 2 tbsp. coarse-grained mustard 1 tbsp. butter 1/4 tsp. pepper
Directions
Halve filet crosswise. Heat oil in a skillet. Add filet halves and cook on both sides to desired doneness. Reserve filets on a plate covered with foil. Add cognac or brandy to skillet to deglaze, scraping up brown bits. Add broth and water and boil until reduced to 1/4 cup. Remove from heat and whisk in mustard, butter and pepper. Pour sauce over filets to serve.
Serves 2.
