Ingredients (view qty in metric system instead)
8 ounces stemmed, chopped dried figs 6 ounces trimmed, chopped pitted dates 1/3 cup water 1/2 cup plus 2 tbsp. sugar 1 3/4 cups all purpose flour 1/4 tsp. baking powder 1/4 tsp. baking soda 1/2 cup butter, softened 4 ounces cream cheese, room temperature 1 tsp. vanilla extract 1 large egg yolk 1/4 cup raw or cane sugar
Directions
Combine figs, dates, water and 2 tbsp. sugar in a blender. Puree until almost smooth. Sift together flour, baking powder and baking soda in a medium bowl. Beat together butter, cream cheese and 1/2 cup sugar in a large bowl until fluffy. Beat in vanilla and egg yolk. Gradually add flour mixture and beat on low speed until just combined. Halve the dough and wrap each half tightly with plastic wrap. Refrigerate dough at least 1 hour. Roll out each dough half into a 1/3 inch rectangle. Divide fig mixture between rectangles and spread evenly, leaving a 1/4 inch border around edges. Roll dough into logs, starting with long edge. Roll logs in raw sugar to coat. Wrap dough logs in wax paper and refrigerate 4 hours. Preheat oven to 350 degrees. Cut dough logs into 1/3 inch thick slices and place 2 inches apart on lightly greased cookie sheets. Bake cookies 15 to 17 minutes until light golden. Transfer cookies to racks to cool.
Makes about 3 dozen cookies.
