Ingredients (view qty in metric system instead)
Crust: 3 cups all purpose flour, sifted 1 1/2 tsp. sugar 1/2 tsp. salt 1 cup solid vegetable shortening 9 tbsp. water
Filling: 1 pound dried figs, finely chopped 1 1/4 cups water 1 1/2 cups sugar 4 tsp. lemon juice
2 tbsp. milk
Directions
For Crust: Stir together flour, sugar and salt in a large bowl. Cut in shortening until a coarse meal forms. Stir in water gradually until a dough just forms. Wrap dough tightly in plastic wrap and refrigerate 1 hour.
Preheat oven to 400 degrees. Divide chilled dough in half. Roll each half out to 1/8 inch thick. Pat 1 sheet of dough into the bottom of an 11x8 inch baking pan. Spread cooled filling evenly over crust. Cover with remaining sheet of dough. Seal edges and cut several slits in the top crust. Brush with milk. Bake 25 to 30 minutes until crust is golden brown. Transfer pan to a rack and cool completely. Cut into squares.
For Filling: Combine chopped figs, water, sugar and lemon juice in a medium saucepan. Heat to a boil over medium-high heat. Reduce heat and simmer about 15 minutes until marmalade consistency. Remove pan from heat and pour filling into a medium bowl. Cool completely.
Makes about 12 large squares.
