Ingredients (view qty in metric system instead)
Pudding: 12 cups French bread, cut into 1 inch cubes 3/4 cup chopped white chocolate 6 large eggs 3/4 cup sugar 1 1/2 tsp. vanilla extract 2 cups heavy or whipping cream 1 1/2 cups milk 1 1/2 cups cherry preserves
Sauce: 1 cup cherry preserves 1 1/2 tsp. vanilla extract 3 tbsp. cherry brandy 1 cup hot fudge ice cream topping, warmed
Directions
For Pudding: Preheat oven to 350 degrees. Lightly coat the inside of a 13x9 inch baking pan with cooking spray. Combine bread cubes and white chocolate in a large bowl. Whisk together eggs, sugar and vanilla in a medium bowl. Whisk in cream and milk until well blended. Pour the egg mixture over the bread cubes. Stir gently to coat bread. Let stand 15 minutes. Transfer the pudding mixture to the prepared pan. Spoon the cherry preserves evenly over the top of the pudding. Bake pudding about 50 to 60 minutes until custard is set. Transfer pudding to a rack and cool while preparing sauce.
For Sauce: Combine cherry preserves, vanilla and cherry brandy in a small saucepan. Heat to a simmer over medium low heat, stirring occasionally.
Divide warm bread pudding between plates and spoon sauce over. Drizzle with warm hot fudge sauce and serve.
Serves 8 to 10.
