Farmers Frittata with Red Onion and Mozzarella

Ingredients (view qty in metric system instead)
7 tbsp. olive oil, divided 1 cup thinly sliced red onion 1/4 tsp. salt 1/4 tsp. pepper 8 large eggs 4 ounces finely chopped mozzarella cheese 1 tbsp. chopped fresh basil leaves
Directions
Heat 1 tbsp. oil in a large skillet over low heat. Add onion and cook, stirring occasionally, until softened, about 15 minutes. Season with salt and pepper and cool completely. Preheat broiler. Beat eggs to blend in a medium bowl. Stir in cooled onions, mozzarella and basil. Heat 3 tbsp. oil in a large, ovenproof skillet over medium heat. Add 1/2 of egg mixture and whisk slightly. Cook until bottom is lightly browned and eggs are softly set on top, about 7 minutes. Transfer pan to broiler and cook until top is lightly browned, about 4 minutes. Transfer frittata to plate. Repeat cooking with remaining oil and egg mixture to make a second frittata. Cut frittata into wedges and serve warm or at room temperature.
Serves 8.
