Ingredients (view qty in metric system instead)
Sauce: 2 cups prepared chili sauce 1 cup cider vinegar 1/2 cup brown sugar 6 tbsp. worcestershire sauce 2 tsp. tabasco sauce
Rub: 2 tsp. pepper 1 1/2 tsp. salt 1 tsp. cayenne pepper 1 tsp. paprika 1 tsp. crumbled dried thyme 1/2 tsp. dry mustard
Ribs: 2 racks pork spareribs, about 3 pounds each 1 1/3 cups water 2/3 cup cider vinegar
Directions
For Sauce: Combine chili sauce, vinegar, sugar, worcestershire and tabasco in a medium saucepan. Simmer sauce until thickened, about 1 hour.
For Rub: Stir together pepper, salt, cayenne, paprika, thyme and mustard in a small bowl.
For Ribs: Place ribs in a large baking pan in a single layer. Sprinkle rib all over ribs and work into meat with your hands. Cover and refrigerate 4 hours or overnight. Preheat oven to 325 degrees. Place a rack in the bottom of each of 2 large baking pans. Place 1 slab ribs in each pan. Pour 2/3 cup water and 1/3 cup vinegar into each pan. Bake ribs 60 minutes. Baste with sauce and bake an additional 15 minutes. Cut between ribs to separate and serve with sauce.
Serves 4.
