Ingredients (view qty in metric system instead)
1 1/2 cups water 1 1/2 cups chopped, pitted dates 1 tsp. vanilla extract 1 1/2 cups all purpose flour 1 cup dark brown sugar 1 cup old fashioned oats 1 1/2 tsp. ground cinnamon 1/2 tsp. baking soda 1/2 tsp. salt 3/4 cup diced butter, room temperature
Directions
Butter the inside of an 8 inch square baking pan. Place water in a medium saucepan and bring to a simmer over medium heat. Add dates and simmer about 10 minutes, stirring frequently, until very soft. Remove the pan from the heat and let dates cool to room temperature. Stir in vanilla. Preheat oven to 350 degrees. Stir together flour, sugar, oats, cinnamon baking soda and salt in a large bowl. Add butter and rub in with your fingers until moist clumps form. Press half of the oat mixture into the bottom of the prepared pan. Spread the date mixture over the crust. Sprinkle the remaining oat mixture over the dates and press down lightly. Bake bars about 40 minutes until golden brown and set in the center. Transfer pan to a rack and cool completely. Cut into bars and serve.
Makes about 1 1/2 dozen bars.
