Ingredients (view qty in metric system instead)
2 pounds sweet potatoes 1 1/2 tbsp. butter, divided 1/2 cup chopped onion 2 1/2 cups peeled, cored, chopped Granny Smith apples 2 1/2 tbsp. water 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. ground nutmeg
Directions
Heat a large pot of water to a boil. Add sweet potatoes and boil 30 to 35 minutes until tender. Drain potatoes and set aside until cool enough to handle. Meanwhile, melt 1 tbsp. butter in a large skillet over medium heat. Add onion to the skillet and cook 6 to 8 minutes, stirring frequently. Add apples and water. Reduce heat, cover and simmer 10 to 15 minutes, stirring occasionally, until apples are tender. Peel sweet potatoes, cut into chunks and transfer to a large bowl. Add remaining 1/2 tbsp. butter, salt, pepper, nutmeg and the apple mixture. Mash until smooth. Serve immediately.
Serves 6.
