Ingredients (view qty in metric system instead)
Crust: 2 cups all purpose flour 1/3 cup cold butter, diced 1/4 cup chilled solid vegetable shortening 1/4 cup cold water 2 tsp. apple cider vinegar
Filling: 3 cups apple cider 3/4 cup plus 1 1/2 tbsp. sugar 1/4 cup all purpose flour 1/2 tsp. ground cinnamon 1/8 tsp. ground nutmeg 2 1/2 pounds Granny Smith apples, cored, peeled and chopped 1 1/2 pounds Golden Delicious apples, peeled, cored and chopped 2 tbsp. water
Directions
For Crust: Combine flour, butter and shortening in a large bowl. Cut together until coarse crumbs form. Add the water and cider vinegar and stir until a dough forms. Divide the dough in 1/2 and flatten each 1/2 into a disc. Wrap the dough tightly and refrigerate about 45 minutes until firm enough to roll. Roll out 1 dough disc to a 12 inch circle and fit into a 9 inch pie plate.
For Filling: Place the cider in a medium saucepan over medium high heat. Boil the apple cider about 20 minutes until reduced to 1/2 cup. Remove the pan from the heat and cool the apple cider 20 minutes. Preheat oven to 425 degrees. Stir together 3/4 cup sugar,flour, cinnamon and nutmeg in a large bowl. Add the Granny Smith and Golden Delicious apples and toss to coat. Stir in the reduced apple cider. Mound the filling into the prepared pie shell. Roll out the remaining dough discto a 12 ionch round and lay over the filling. Press the dough edges to seal then crimp decoratively. Brush the top of the dough with water and sprinkle with the remaining 1 1/2 tbsp. sugar. Cut several slits in the top crust to vent steam. Place the pie on a sheet panand bake 25 minutes. Reduce oven to 350 degrees and bake pie an additional 40 to 50 minutes until the apples are tender, juices are bubbly and the crust is golden brown. Serve pie warm or at room temperature.
