Ingredients (view qty in metric system instead)
Shrimp: 1 pound fresh medium shrimp, shelled and deveined 1 tbsp. fresh orange juice 2 tsp. olive oil 1/4 tsp. mashed fresh garlic
Sauce: 1/2 cup prepared mayonnaise 3 tbsp. ketchup 1 1/2 tbsp. Cognac 2 tsp. fresh lime juice 1/2 tsp. sugar pinch cayenne pepper
3 ripe avocados, peeled, pitted and diced 2 medium navel oranges, peeled and sectioned
Directions
For Shrimp: Heat a large saucepan of salted water to a boil. Add shrimp and boil 1 to 2 minutes until just firm. Drain well. Transfer shrimp to a large bowl. Add oil, garlic and 1 tbsp. orange juice. Stir to coat. Cool shrimp to room temperature.
For Sauce: Whisk together mayonnaise, ketchup, Cognac, lime juice, sugar and cayenne in a small bowl until smooth.
For Assembly: Add avocados and orange sections to shrimp and toss to combine. Divide mixture among 4 martini or margarita glasses. Spoon sauce over and serve.
Serves 4.
